This i...I just made this and it turned out AMAZING! This is, by far, the best grain free bread I have made. It is airy, surprisingly not eggy, and sturdy without being dry. It also has a very nice, mild flavor that would make it quite versatile. As a plus, it did not stick to my pan at all, which is a first for me in grain free baking!<br />Because there were a few questions about these things: <br />#1- I used non refined coconut oil in place of butter (in the same amount) and that worked very well, but the lack of moisture in the coconut oil and the fact that it hardens at a higher temperature than butter required me to add one more egg and a splash of liquid (I used soy milk) to make the batter "pourable" instead of needing to be spooned into the pan. It tasted slightly coconut-y but not unenjoyably so. It is not greasy, either.<br />#2-I baked this in a bread machine. I have a Zojirushi, which allows you to bake only, without any kneading. I did it on medium for 1:10 and it came out perfect and moist. If you have a bread machine with a bake only option, it works very well. It keeps the bread moist and bakes at a lower temperature that won't burn the bread. <br />What a great recipe! After 5 weeks of googling and pinteresting, I finally found this recipe. I've never seen anything like that in my bread, but I think it has to do with the apple cider vinegar in the recipe reacting with the metal baking pan. (I always bake it in a glass loaf pan.)<br /><br />You could avoid probably keep this from happening again by lining the pan with parchment paper to keep the batter from touching the side of the pan.
